Дослідження було проведено з метою вперше детально вивчити життя та діяльність видатного представника профілактичної науки України професора Бурштейна А.Й., який у 1933–1941 та 1944–1962 рр. очолював кафедру гігієни харчування в Одеському медичному інституті (зараз Одеський національний медичний університет). Були вивчені архівні матеріали м. Одеса та виявлені документи, дані яких раніше не були опубліковані. Їх аналіз дозволив висвітлити основні віхи біографії вченого: лікар (1918), доцент (1930), професор (1934), доктор медичних наук без захисту дисертації (1935), заслужений діяч Казахської РСР (1945). Бурштейн А.Й. був учнем професора Костяміна М.М. Пошук опублікованих робіт Бурштейна А.Й. виявив напрямки його наукових досліджень у напрямках гігієни праці та гігієни харчування. Було встановлено, що протягом усієї своєї наукової діяльності Бурштейн А.Й. значну увагу приділяв складання посібників з методів санітарно-гігієнічних досліджень. Першу такий посібник він опублікував у 1916 р. в Одесі, а у 1918 р. там же перевидав цю книгу. У 1934 р. у Києві видав посібник з методів дослідження аерозолів; в 1954 р. там же випустив посібник з методів дослідження запиленості та задимленості повітря, яке фактично стало другим доповненим і розширеним виданням книги 1934 р. У 1950 р. у Києві видав ще один посібник з методів санітарно-гігієнічних досліджень. І, нарешті, 1963 р. у тому ж київському державному медичному видавництві, де побачили світ усі попередні його керівництва, випустив посібник з методів дослідження харчових продуктів.
